Sous Vide

A professional sous vide machine (often simply called a sous vide or water bath) makes it easy to get great results when cooking food under vacuum at incredibly accurate temperatures. Commercial sous vide machines are usually paired with a professional vacuum sealer and use vacuum sealer bags to lock in all the juices and flavour. It's also possible to cook sous vide in some of the more advanced combi ovens.
